Sourdough Blueberry Lemon Muffins

Ingredients

  • 2 cups flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt by
  • 1 tbsp cornstarch
  • ½ cup butter
  • 2 eggs
  • 2 tbsp milk
  • 3 tbsp Greek yogurt
  • ½ cup sourdough discard
  • 1 tbsp vanilla paste
  • 2 tbsp lemon juice + zest of one lemon
  • Blueberries

Directions

  • Preheat your oven to 375 F.
  • Rub zest and sugar between your fingers.
  • Mix in flour, baking powder, baking soda, salt, cornstarch and blueberries.
  • Into a separate bowl add all the wet ingredients.
  • Mix until fully combined.
  • Pour your wet ingredients into dry and mix until fully combined but don’t over mix. The mixture will be thick.
  • In a small bowl mix 3 tbsp melted butter, ½ cup sugar and ½ cup flour to make the crumb.
  • Sprinkle the crumb over the muffins.
  • Bake for 25 minutes.
