Ingredients

  • 2 tbsp butter
  • 1 tbsp flour
  • 1 cup heavy cream
  • 1 ½ cups cheese ( I used a mix of cheddar, mozzarella and havarti )
  • Salt and pepper to taste
  • ¼ tsp garlic powder
  • ¼ tsp smoked paprika
  • ½ tsp Dijon mustard
  • ⅛ tsp cayenne pepper
  • 1 cup pasta ( I love using cavatappi )
  • Chives for topping

Directions

  • Preheat over to 375F.
  • Cook your pasta until Al dente. Drain but save just a splash of pasta water.
  • Into a saucepan add your butter and melt.
  • Add flour and cook until golden brown.
  • Pour in your cream, whisk until smooth and bring to simmer until the mixture thickens.
  • Take off heat.
  • Add all the seasonings and 1 cup of cheese.
  • Add your cooked pasta and mix making sure all the noodles are coated.
  • Spread evenly between 2 buttered ramekins.
  • Top with remaining ½ cup of cheese.
  • Bake for 15-20 minutes.
